How do you make an ice cream sandwich with chocolate chip cookies even better? Dip it in chocolate. Boom!
4 cups vanilla ice cream, slightly melted
2 cups bittersweet chocolate chips
1/2 cup puffed rice
For the chocolate chip cookies:
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter, melted
1/2 cup light brown sugar
1/3 cup sugar
1/2 tsp vanilla
3/4 cup semisweet chocolate chips
Let's get Cooking...
Preheat oven to 325 degrees F.
Spread softened ice cream into a baking dish lined with parchment paper. Smooth out to about 1-inch thick. Freeze until solid.
Mix together the chocolate chip cookie ingredients. Spread onto another parchment-lined baking pan. Smooth out the top. Bake for 15 minutes. Remove and cool to room temperature. Cut into 8 pieces, then halve each cookie. Set aside.
Remove the ice cream, and cut into 8 pieces. Put back into freezer.
Prepare your chocolate. Melt chocolate and mix in the puffed rice. Set aside.
Take a rectangle of ice cream and sandwich one end between two cookies. Dip the other end in the chocolate puffed rice. Set on a baking sheet lined with parchment paper. Freeze until solid. Enjoy!
