Coconut Apricot Bites

Mari throws together truffles with the taste of the tropics.



  • 1 cup dried apricots
  • 1 tablespoon of maple syrup
  • 1 tablespoon of coconut oil
  • 1/2 cup coconut flour
  • 1/2 teaspoon vanilla essence
  • Desiccated coconut
  • Cacao powder

Let's get Cooking...

  1. Pulse the apricots until you get a fine crumb or paste.
  2. Whilst the food processor is on, slowly add the coconut flour, coconut oil, maple syrup and vanilla essence.
  3. Take a heaped tablespoon of the mixture and roll into balls.
  4. If desired, roll them in the desiccated coconut or cacao powder.
