Soba Noodle Salad

Skip your usual cold sandwich lunch routine, and try noodles instead.



  • 8 ounces soba noodles
  • 2 cups frisee lettuce, roughly chopped
  • 1 cup carrots, shredded
  • 2 bunches scallions, thinly sliced
  • For the sauce:
  • 1 tablespoon miso paste
  • 1 tablespoon peanut butter
  • 1 tablespoon greek yogurt
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • Black sesame seeds to serve

Let's get Cooking...

  1. Cook soba noodles according to package instructions. Be sure to rinse cooked noodles in cold water and drain well.
  2. In a large bowl, combine the sauce ingredients. Then add the cooled and drain soba noodles and vegetables. Toss to coat everything well. Sprinkle more scallions and black sesame seeds on top.
