Think of this as a delicious whoopie pie, but made with chocolate chip cookies instead and dipped in chocolate.



  • Chocolate Chip Cookies:
  • 1 stick of butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1 teaspoon water
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cup all purpose flour
  • 1 1/2 cup chocolate chip, semi sweet
  • Buttercream
  • 1/2 stick butter, room temperature
  • 2 cups powdered sugar
  • Pinch of salt
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons whole milk
  • Dipping Chocolate:
  • 1 bag of Ghiradelli melting chocolate disc

Let's get Cooking...

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine butter and sugar together and mix until combined.
  3. Add egg and mix until there are no yellow streaks. Add baking soda, water, kosher salt, and vanilla extract. Mix well.
  4. Add flour and chocolate chips and mix until there are no more flour streaks.
  5. Bake for 10 minutes until cookies are golden brown. Remove from oven and let cool completely.
  6. Buttercream: In a bowl, add all ingredients and mix together until there are no lumps. If the buttercream is still lumpy, add additional tablespoon of milk and continue mixing.
  7. Pipe buttercream on one chocolate chip cookie, then sandwich together.
  8. Melt chocolate chips.
  9. Take sandwich and dip into melted chocolate. Let excess drip on baking rack until chocolate firms up. Enjoy!
