Cream and Caramel Eclair


Instead of the usual chocolate glaze, top off your pastries with caramel for an especially sweet treat.



  • 1 cup milk
  • 2 tablespoons of butter
  • 1 tablespoon of sugar
  • 1 cup flour
  • 1 egg
  • 1 1/2 cups sugar
  • 1/3 cup water

Let's get Cooking...

  1. In a saucepan, cook the milk, butter and 1 tablespoon of sugar.
  2. When bubbles start forming, remove from heat and add the flour all at once, stirring constantly.
  3. Cook the dough until forming a smooth ball that doesn't stick to the bottom of the pan.
  4. Allow it to cool and incorporate the eggs.
  5. Using a pastry sleeve, make long eclairs, about 10 centimeters in length.
  6. Bake in a preheated oven at 350°F for about 30 minutes, until they begin to brown.
  7. Place sugar sugar and water in a saucepan and cook over medium heat. Boil to a caramel.
  8. Top the eclairs with caramel. Allow it to cool.
