Dome Tart Cheesecake

Ingredients

  • 10 grams cocoa powder
  • 160 grams flour
  • 80 grams butter
  • 50 grams sugar
  • Vegetable oil
  • 1 ready-made sponge cake
  • 200 grams cream cheese
  • 100 grams heavy cream
  • 50 grams sugar
  • Lemon juice
  • 5 grams powdered gelatin (sprinkled over water)
  • 50 milliliters hot water
  • Butter
  • Pink grapefruit
  • Mixed berries
  • Glaze:
  • 5 grams gelatin
  • 20 grams sugar
  • 50 milliliters hot water
  • Confectioners' sugar

Let's get Cooking...

  1. Combine cocoa powder, flour, butter and sugar and mix to make a dough.
  2. Make slits into the dough to make a basket pattern.
  3. Brush some oil onto a heat-proof bowl and place dough on top.
  4. Bake for 20 minutes at 180 degrees C.
  5. Combine cream cheese, sugar, cream, lemon juice and gelatin and mix well.
  6. Grease cake pan and place a layer of sponge cake inside.
  7. Pour cream cheese mixture into the pan.
  8. Chill in refrigerator for at least 2 hours.
  9. Arrange grapefruit segments on top and brush with glaze.
  10. Top with mixed berries.
  11. Cover the cake with the pastry dome and sprinkle with confectioners' sugar.
