Dr Pepper Can Chicken

Infuse your roasted chicken with the many flavors of Dr Pepper.

Ingredients

  • 1/2 cup kosher salt
  • 1/2 cup white sugar
  • 3 qt cold water
  • 1 whole 3-4 pounds chicken
  • 1 can Dr Pepper
  • 1 tablespoon melted butter
  • Rub ingredients:
  • 1 tablespoon chili powder
  • 2 teaspoons salt
  • 2 teaspoons brown sugar
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper

Let's get Cooking...

  1. Mix salt and white sugar in cold water until completely dissolved. Place chicken in brine for 1 hour. Remove and pat dry.
  2. Preheat oven to 350°F.
  3. Combine rub ingredients in a small bowl. Set aside.
  4. Brush the chicken all over with melted butter, then massage the rub all over the chicken.
  5. Place chicken on open can of Dr Pepper. Roast for 1 1/2 hours, or until a meat thermometer reads 180°.
  6. Remove chicken from oven, let it rest for 10 -15 minutes, discard can, carve and serve.
