Easy Oven Rice

This oven-baked rice is easy, cheesy and full of yummy veggies.

Ingredients

  • 2 cups rice
  • 1 onion, diced
  • 2 tomatoes, diced
  • 1/2 cup green olives, chopped
  • 1 cup peas
  • 1 cup corn
  • 200 grams ham, chopped
  • 150 grams mozzarella cheese, grated
  • 50 grams Parmesan cheese, grated
  • 1 tablespoon olive oil
  • Salt
  • Black pepper
  • 4 cups vegetable stock
  • 3 tablespoons chopped parsley

Let's get Cooking...

  1. In an ovenproof dish, mix the rice, onion, tomato, olives, peas, corn, ham, mozzarella and parmesan.
  2. Add olive oil, season with salt and pepper and mix.
  3. Add the vegetable broth, cover with foil and bake in preheated oven at 350°F/180°C for approximately 1 hour. Remove the foil for the final 20 minutes of cooking.
  4. Serve with chopped parsley.
