Fried Takeout Rice

Frankie Celenza

Break out your takeout white rice and turn it into stir-fried deliciousness.

  • Peanut oil
  • 1 carrot, diced
  • 1 cup broccoli florets
  • 1 leek, thinly sliced
  • 2 garlic cloves, sliced
  • Ginger, peeled and grated
  • Leftover rice
  • 1-2 eggs
  • Sesame oil
  • Soy sauce

Let's get Cooking...

  1. Heat a large wok over high heat. Add some peanut oil, followed by the carrots and broccoli. Add the leeks and cook until aromatic, 2-3 minutes. Add ginger and garlic and toss to combine.
  2. Stir in the leftover rice, adding more oil if needed. Once the rice is cooked through (warm/crispy in places), lower the heat.
  3. Make a well in the center of the rice and add a dab of oil. Add the egg, beating it with a fork until cooked, increasing heat if necessary.
  4. Add sesame oil and soy sauce, and serve!
