Galaxy Sugar Cookie Bars

Send regular ol' dessert out of this world with this sweet and colorful treat.



  • Sugar cookie bars:
  • 3/4 cup butter (1 1/2 sticks), softened to room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Frosting:
  • 3/4 cup (1 1/2 sticks) butter, room temperature
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk
  • Pink, blue, and purple food coloring
  • White sprinkles

Let's get Cooking...

  1. Preheat oven to 350°F.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs and vanilla and mix for 1-2 minutes. Stir in the flour, baking powder and salt. Mix until combined.
  3. Lightly grease a 9x9 baking pan with cooking spray. Press the sugar cookie mixture gently into an even layer on the bottom of the pan.
  4. Bake for 18 minutes or until edges are lightly golden brown.
  5. Let cool for 10 minutes, then flip out onto cutting board and let cool completely.
  6. Prepare the frosting. Cream together butter and sugar until light and fluffy. Mix in vanilla extract, and add enough milk to reach desired consistency. Divide among four bowls. Color one bowl with pink food coloring, one bowl with blue, and one bowl with purple, leaving the last bowl white.
  7. Dollop different colors of frosting over bars. Using a large offset spatula, apply firm pressure and swipe one stroke across bars. Repeat until bars are frosted. Sprinkle with white sprinkles, and cut into bars.
