Gingerbread Eggnog White Russian Pudding

Make the holidays extra jolly with spiked pudding featuring gingerbread and eggnog flavored cheesecake pudding with a molasses drizzle and crushed Oreos.

Ingredients

  • Pudding
  • 200g cream cheese (softened)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp powdered ginger
  • 125ml eggnog
  • 2 tbsp vodka
  • 2 tbsp kahlua
  • 3 tbsp molasses (plus extra to line rim of glasses)
  • 200ml thickened cream
  • 2 golden Oreos or vanilla cookies.
  • Cream topping
  • 100ml thickened cream
  • 50g powdered sugar
  • 1 tsp vanilla extract

Let's get Cooking...

  1. Pudding
  2. Start by adding cream cheese to a large mixing bowl and whip using a hand mixer until creamy and smooth. Next add cinnamon, ginger, vanilla extract, eggnog, vodka, kahlua and molasses. Whip on low speed and increase to high until smooth. Set aside.
  3. Add thickened cream and vanilla extract into a mixing bowl and mix to stiff peaks using a hand mixer. Add half the whipped cream to the cream cheese mixture. Gently fold using a spatula and then repeat with the other half. Add to serving glasses. Chill for 20 min.
  4. Carefully coat the rim of each glass in some molasses.
  5. Cream Topping
  6. Add cream, powdered sugar and vanilla extract into a mixing bowl and mix to stiff peaks using a hand mixer.
  7. Add whipped cream on top of pudding and finish off with some crushed golden Oreos.
