Gnocchi With Sage Butter
The ultimate comfort food with melt-in-your-mouth flavors.
2 pounds potatoes
1 1/2 cup flour
Salt, to taste
Nutmeg, to taste
3 1/2 ounces butter
Sage leaves, to taste
Grated Parmesan, for garnish

Roast the unpeeled potatoes in the oven at 480 degrees F until well cooked.
When ready, let them cool a bit and when they are warm, peel and knead.
Arrange the mashed potatoes on a lightly floured surface; add half of the flour, egg, salt and nutmeg.
Mix with your hands and slowly add the remaining flour.
Divide the dough into two parts, make two long rolls and cut with a knife into small pillow-shaped gnocchi.
Cook in a large pot of boiling water. When they start to float they're cooked!
Remove and reserve in a bowl with 2 tablespoons of olive oil.
In a skillet, melt the butter over low heat, add the sage leaves and gnocchi.
Cook for another 3 minutes. Serve with grated Parmesan cheese.
