Goya Chanpuru Rings

This crispy fried bitter melon snack is like a Japanese version of ham and eggs.



  • 1 bitter mellon
  • 2 slices spam
  • 100 grams firm tofu
  • 1 egg
  • Salt
  • 1/2 teaspoon powdered dashi
  • 1/2 teaspoon soy sauce
  • Potato starch
  • Vegetable oil
  • Grated daikon radish
  • Bonito flakes

Let's get Cooking...

  1. Drain tofu of excess water by placing on paper towels and setting it aside for 10 minutes.
  2. Slice spam into 5mm thickness.
  3. Slice into rings and scoop out the seeds of the bitter melon.
  4. Microwave for 2 minutes at 600 watts.
  5. Combine egg, salt, dashi and soy sauce and mix well.
  6. Heat oil in frying pan on medium heat. Add egg mixture and spam. Crumble tofu on top and stir-fry until eggs are half cooked.
  7. Fill bitter melon rings with egg mixture.
  8. Coat each ring with potato starch.
  9. Cook both sides until lightly browned.
  10. Serve with grated daikon radish and bonito flakes.
