Being crunchy has its advantages — delicious, decadent advantages.
2 ½ cups rolled oats
1 ½ cups almonds, roughly chopped
¼ cup unsweetened coconut flakes
½ cup dried cranberries
½ cup mini chocolate chips
6 tbsp salted butter
1 cup brown sugar
1 ½ tsp ground cinnamon
6 tbsp honey
2 tbsp molasses
Melted dark chocolate

Combine the rolled oats, almonds and coconut flakes in a large bowl. Set aside.
Place the butter, sugar, cinnamon, honey and molasses in a microwave safe bowl and microwave at 30 second intervals until the mixture is bubbling.
Add the cranberries and chocolate chips to the dry mixture and stir to combine. Add the liquid mixture and mix well.
Spoon the mixture into a square 9x9-inch baking dish lined with plastic wrap. Firmly press the granola into the pan. Drizzle the melted dark chocolate on top. Place in the fridge for 30 minutes, or until firm.
Remove the granola from the pan and slice into 16 bars. Wrap each bar in wax paper and secure with some butcher’s twine. Enjoy!
