Homemade Marshmallow Peeps

Marshmallow Peeps made in the comfort of your own home! These are sweet, fluffy and so much fun to make!

  • 2 1/2 teaspoon powdered gelatin
  • 1/3 cup cold water
  • 1 cup sugar
  • 1/4 cup cold water
  • 1/2 vanilla bean pod (seeds only)
  • Yellow & brown food colouring
  • 1 tablespoon confectioner's sugar
  • 1 tablespoon corn starch

Let's get Cooking...

  1. Pour 1/3 cup of cold water into the bowl of an electric mixer and sprinkle the powdered gelatin on top.
  2. Let sit for 5 minutes.
Place the sugar and 1/4 cup cold water in a small pot and set to medium-high heat. Stir until the sugar has melted.
  3. Attach a candy thermometer to the pot and boil the sugar until it reaches 238F. Brush the sides of the pot with a wet pastry brush if sugar crystals stick to the sides.
  4. Add the hot sugar to the gelatin and stir the mixture by hand whisking for a few minutes to slightly cool.
  5. Then beat with an electric mixer on medium-high speed for 8-10 minutes, until soft peaks form. Then add the vanilla bean seeds and mix well. Add enough yellow food coloring to dye the marshmallow a vibrant yellow.
  6. Place the marshmallow into a piping bag fitted with a large, round tip. Pipe peeps onto a baking sheet lined with wax paper.
  7. Dot eyes onto the peeps using a toothpick dipped in brown food coloring. Allow the peeps to stiffen, uncovered, at room temperature overnight.
  8. Combine the confectioner's sugar and corn starch in a small bowl. Peel each Peep off the wax paper and dip the bases into the mixture, to remove any excess stickiness. Bounce in a mesh sieve to remove any excess powder and enjoy! (These are best consumed within 1-2 days.)
