Preheat your oven to 350F and prepare two baking sheets with parchment paper. To one sheet, spray with cooking spray.
In a bowl combine the beaten egg white, pine nuts, salt and chili flakes until evenly coated. Spread over a parchment paper-lined baked sheet (non-greased) and bake in the oven for 5-7 minutes until lightly golden, scrambling them with a fork once in between.
In a large pot add sugar, water, and corn syrup and cook over medium-high heat. Brush down the sides with water and a pastry brush and cook until the mixture reaches 280F. Once the sugar reaches the temperature and is a nice amber color turn off the heat then add the pine nuts with the baking soda and butter. Quickly stir the mixture until it's evenly mixed.
Pour the mixture onto the oiled parchment paper and spread it with the oiled spatula. Once flat, let cool completely.
