Let's get Cooking...
Make the dough: In the bowl of a stand mixer, add water, yeast and white sugar. Attach dough hook, and add olive oil, flour and salt. Mix until the dough just begins to come away from the sides of the bowl, approximately 5 minutes.
Grease a bowl with a little bit of olive oil and place dough in it. Cover with a cloth, and allow to rest for 1 hour, or until doubled in volume.
Make the sauce: Combine all ingredients in a bowl and set aside.
To assemble: Preheat oven to 425 degrees. Grease a large baking pan (18 by 26 inches) lightly with cooking spray followed by olive oil.
Stretch out dough to resemble a large pizza slice, approximately 1/2 inch thick. Top with a thin layer of sauce, a generous scattering of mozzarella, and arrange toppings on top. Bake for 25 to 30 minutes until crisped and browned. Cut into slices and enjoy!
