Lomo Saltado (Peruvian Stir-Fry)

You'll truly wish you've been eating fries this way all along.



  • 1 1/2 cups french fries, baked or fried
  • 1 pound sirloin steak, cut into thin stirps
  • 2 garlic cloves, thinly sliced
  • 1 red onion, cut into thin wedges
  • 4 plum tomatoes, cut into wedges and seeded
  • 3 tablespoons aji amarillo paste
  • 1/4 cup soy sauce
  • 2 tablespoons red wine vinegar
  • 2 teaspoons cumin
  • Cilantro to serve
  • Salt & pepper to taste
  • Oil for pan

Let's get Cooking...

  1. Heat oil in a skillet on med-high heat. Pat dry steak strips and season with cumin, salt, pepper. Add beef to brown for a few minutes.
  2. Add onion and garlic. Stir and saute, until softened. Add aji amarillo paste, soy sauce, and vinegar. Mix well. Add tomatoes and cook for another 2-3 minutes. Sprinkle in cilantro.
  3. Serve with fries and rice.
