Meatloaf Cupcakes


How to make Meatloaf Cupcakes.



  • 1 pound ground beef
  • 6 ounces Italian sweet sausage
  • 1/3 Cup breadcrumbs
  • 4 tablespoons milk
  • 1 egg
  • Pinch of salt
  • 4 tablespoons grated Pecorino cheese
  • 1/3 Cup white wine
  • 4 tablespoons grated Parmesan cheese
  • 2 tablespoons minced fresh thyme
  • For the frosting:
  • 1 cauliflower
  • 4 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon salt
  • 2 tablespoons Vegetable Broth

Let's get Cooking...

  1. Preheat oven at 400F
  2. In a big bowl mix together the ground beef with the Italian sweet sausage, the breadcrumbs, the milk, the grated Parmesan cheese, the grated Pecorino cheese, the egg, the minced fresh thyme and a pinch of salt.
  3. Fill each cup of a mini-cupcake pan with one tablespoon of meatloaf mix, rolled in a small ball.
  4. Pour one teaspoon of white wine in each cup
  5. Bake the meatloaf cupcakes in preheated oven at 400F for 25 minutes
  6. Cut the cauliflower florets in big pieces. Place them on a parchment paper on a baking sheet.
  7. Drizzle with Extra Virgin Olive Oil and season with salt.
  8. Bake for 40 minutes at 400F
  9. Place the roasted cauliflower in a food processor, add the vegetable broth and pulse until smooth.
