Mini Oreo-Stuffed Brownie Bites

With 2 Oreos in 1 bite-sized treat, this is an Oreo lover's dream come true.



  • Brownies
  • 1/2 cup (1 stick) butter, melted
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Frosting
  • 1 cup (2 sticks) butter, room temperature
  • 3 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 2-3 tablespoons milk
  • Blue food coloring
  • Sprinkles
  • Mini Oreos

Let's get Cooking...

  1. Preheat oven to 350°F. Spray mini cupcake pan with cooking spray.
  2. Combine butter, sugar, and vanilla. Add eggs one at a time, mixing after each addition.
  3. Mix in cocoa powder, then add flour, baking powder, and salt. Mix well.
  4. Scoop about 2 teaspoons of batter into each mini cupcake pan space, then add mini Oreos on top. Scoop an additional 2 teaspoons of batter to cover Oreos.
  5. Bake for 15 minutes, or until toothpick inserted into center comes out clean. Let cool completely.
  6. To make the frosting, cream together butter and sugar until light and fluffy. Mix in vanilla extract, and add enough milk to reach desired consistency. Color light blue with food coloring.
  7. Pipe frosting over cooled mini brownies, then top with sprinkles and a mini Oreo.
