Mock Unagi Don (Grilled Eel Rice Bowl)


The grilled eel in this unadon may not be real, but it's still really tasty.



  • 100 grams hanpen (fish & paste cake)
  • 150 grams firm tofu, drained of excess moisture
  • 5 centimeters length gobo (burdock)
  • 1 sheet nori
  • 2 tablespoons potato starch
  • Pinch of salt
  • 1 tablespoon vegetable oil
  • Sauce:
  • 1 tablespoon sake
  • 2 tablespoons mirin
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • Cooked white rice

Let's get Cooking...

  1. Cut nori in half. Cut each slice into an oblong shape, resembling grilled unagi (eel).
  2. Combine hanpen, firm tofu, gobo, potato starch and salt and grind to a paste.
  3. Spread paste onto the nori sheets. Make indentation marks with your fork to mimic grilled unagi.
  4. Heat some vegetable oil in a frying pan and place the the mock unagi pieces nori side down. Cook over medium heat for 4 minutes, then flip over and cook for another 4 minutes.
  5. Add ingredients for the sauce in the pan and cook until sauce starts to thicken.
  6. Place on top of a bowl of hot rice. Brown the surface of the mock unagi pieces with a torch. Garnish with grilled shishito peppers and sprinkle on sansho Japanese pepper.
