These rich, chocolatey bars are packed with flavorful goodness.
2 1/2 cups rolled oats, divided
1/4 cup flaxseeds, ground
Salt, to taste
1 large sweet potato (cooked, skin still on)
1/3 cup almond butter
1/3 cup peanut butter
1/4 cup coconut oil
2 teaspoons cinnamon
5 tablespoons maple syrup
1 1/2 teaspoon vanilla extract

In a food processor, blend 1 cup of the rolled oats into flour. Transfer to a large bowl, and add the rest of the rolled oats, ground flaxseeds, and salt.
Using the same food processor or blender, add all the wet ingredients (the cooked sweet potato, butters, cinnamon, maple syrup, coconut oil and vanilla). Blend until smooth. Scrape the wet ingredients into the bowl with the dry ingredients and mix until fully combined.
Transfer the mixture to a lined baking dish and place in the freezer or fridge to harden.
In a medium-sized bowl, combine cacao powder, coconut oil and maple syrup.
Cut the bars into squares and drizzle the chocolate topping over the top. Return the bars to the refrigerator or freezer to set the chocolate.
