Open-Faced Egg Sandwich

Healthy, quick breakfast option for those egg-lovers



  • 1 slice of sourdough, sprouted, or gluten-free bread
  • A small handful of arugula or mixed greens, cleaned
  • 1/2 avocado, cubed
  • Salt
  • Pepper
  • 1 good quality egg
  • Any type of hot sauce

Let's get Cooking...

  1. Toast the bread in a toaster oven.
  2. Meanwhile, fry your egg.
  3. In a skillet over medium heat, drizzle with a little cooking oil.
  4. Crack the egg into the pan and cook for about 4-5 minutes or until the egg white is just set and the edges start to curl up. Remove from heat.
  5. Remove the bread from the toaster.
  6. Place on top the mixed greens and chopped avocado.
  7. Sprinkle with salt and black pepper.
  8. Top with your fried egg and serve with hot sauce, if preferred.
  9. Serve immediately. Happy cooking!
