Can you resist stuffing yourself with these ice cream sandwiches stuffed with yummy Oreos?
1 cup + 1 tbsp all-purpose flour
¼ tsp baking soda
½ cup unsalted butter, room temperature
¼ cup granulated sugar
½ cup light brown sugar
½ tsp salt
1 tsp vanilla extract
1 large egg
1 cup chocolate chips
Vanilla ice cream, softened

Bake the cookies:
Whisk together the flour and baking soda in a bowl and set aside. Place the butter, granulated sugar and brown sugar in a bowl and beat with an electric mixer until pale and fluffy. Add the salt, vanilla and egsg and mix until combined. Add the flour mixture and mix. Add the chocolate chips and mix until just combined. Roll into balls and place on a baking sheet lined with parchment paper. Bake at 350F for 8-10 minutes, until the edges are golden. Cool completely.
Line a baking dish with plastic wrap. Layer the bottom half with vanilla ice cream and place oreo cookies on top. Try your best to remember where you placed them, then cover with more vanilla ice cream. Place another sheet of plastic wrap on top and freeze until completely firm, up to 5 hours or overnight.
Grease a round cookie cutter or glass and cut circles of ice cream that are the same size as the chocolate chip cookies. Sandwich the ice cream between 2 cookies and bite to reveal the oreo cookie inside!
