Pancit Bites


Pancit bites aka noodle bites with shrimp, cabbage and carrots.



  • 8 ounces bihon noodles (filipino rice stick)
  • Cooking oil
  • 3 ounces sliced onion
  • 1 teaspoon chopped garlic
  • 2 ounces thin strips carrot
  • 2 ounces strips cabbage
  • 1/4 cup chicken stock
  • 1 teaspoon soy sauce
  • 1 teaspoon fresh kalamansi or lime juice
  • 20 to 22 cocktail shrimps

Let's get Cooking...

  1. Soak bihon noodles in cold water for 5 minutes, drain for 10 minutes.
  2. Heat a large nonstick skillet over medium high heat, add 3 to 4 tablespoons oil; swirl to coat.
  3. Grab enough noodles to make about 1 1/2 inch disc. place in pan carefully. Cook it until bottom is crispy 3 to 5 minutes. Remove, place on paper towel or rack. Continue, makes 20 to 22. Set aside.
  4. Heat a large skillet over medium high heat. add bacon. Cook until crispy, about 7 to 8 minutes. Remove, place on paper towel. Add onion and garlic in now-empty-skillet, saute 1 minute, stirring frequently. Add carrot saute 1 minute then add cabbage and chicken stock, soy sauce and lime juice, saute 2 minutes, stirring frequently. Remove and set aside.
  5. Arrange vegetables, shrimp, bacon on top of prepared noodle disks. Garnish with chopped cilantro, enjoy!
