Papaya Avocado And Black Bean Lettuce Cups

Julie's favorite salad just may become yours too.



  • For the dressing:
  • 1 tablespoon papaya seeds
  • 1/2 tablespoon Agave
  • The juice of one lime
  • A pinch of salt
  • For the salad:
  • 1/4 of chopped papaya
  • 1 cup black beans
  • 1/4 of a red onion chopped
  • 2 diced tomatoes
  • 1 diced avocado
  • A small handful of cilantro
  • A thumb size piece of chopped fresh jalapeño
  • Chopped cooked shrimp
  • Toasted pine nuts
  • Butter lettuce (to serve)

Let's get Cooking...

  1. Add together all the ingredients for the dressing into a mortar and pestle or blender and crush thoroughly. Let it hang out in the fridge while you prepare your salad.
  2. Chop up all the ingredients for the salad and place into a large bowl.
  3. In a large bowl mix in all the ingredients for the salad including the dressing. Layer butter lettuce leaves on a platter and pour the salad into the center. Before serving I like to also add some homemade tortilla chips on the side.
