The perfect way to the quench the summer heat is with a refreshing peach-lime slushy topped with bubbly.
1 1/2 cups fresh peaches chopped
1 can grapefruit soda
2 Fresh limes
6 leaves basil
1 1/2 cups water
2 tablespoons Maple syrup
Optional: Sparkling wine or sprite or soda water

To make the peach flavour, start by blending the peaches in a blender until smooth. Transfer into a bowl and stir in the can of grapefruit soda. Place in the freezer for 1 hour. For the lime flavour blend the limejuice, basil, water and maple syrup until the basil leaves have broken down. Transfer into a separate bowl and place in the freezer for 1 hour.
Once partially frozen use a fork to break up the ice crystals in each bowl and then return to the freezer for another half hour. Continue this process each half hour (2 or 3 times) until each flavour becomes a fluffy slush.
To serve, layer the peach flavour into a glass and then top with the lime basil flavour. At this point you can serve it as is or pour over a little sparkling wine.
