3 ripe bananas
6 tbsp vegetable oil
½ cup sugar
1 large egg
1 tsp vanilla extract
¼ tsp salt
½ cup canned pineapple, chopped into small pieces
¼ cup maraschino cherries, chopped into small pieces
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
2 tbsp coconut cream
½ cup confectioner’s sugar

Place the bananas in a bowl and mash well. Add the vegetable oil and sugar and mix. Add the egg, vanilla extract and salt and mix until fully combined. Add the pineapple and maraschino cherries and combine. Add the flour, baking soda and baking powder and mix until everything is fully incorporated.
Pour the batter into a greased loaf pan and bake at 350F for 45 minutes – 1 hour.
To make the glaze, combine the coconut cream and confectioner’s sugar in a small bowl. Drizzle it over the banana bread while it is still warm. Once the banana bread has cooled to room temperature, slice and enjoy!
