Potato Chip Spanish Omelette

Why settle for your average hash browns and scrambled eggs? Say, "Good morning!" to this irresistible egg dish instead.



  • 8 eggs
  • 1 bag potato chips (consomme flavor)
  • 1/2 onion, roughly chopped
  • 1/2 zucchini, roughly chopped
  • 1/2 red bell pepper, roughly chopped
  • 1 teaspoon anchovy paste
  • 1 teaspoon grated garlic
  • 3 tablespoons parmesan cheese
  • Black pepper
  • 20 grams butter

Let's get Cooking...

  1. In a large bowl, combine crushed potato chips, eggs, anchovy paste, garlic, parmesan cheese and pepper. Mix to combine.
  2. Melt butter over medium heat in a frying pan. Saute onions, zucchini and red bell pepper until just tender.
  3. Pour in egg mixture and mix to combine well.
  4. Cook covered over low heat for 10-15 minutes.
  5. Carefully flip it over and cook the other side for 5-6 minutes or until eggs are done.
  6. Serve with ketchup and black olives if desired.
