Parmesan Potato Wedges

Putting an herby potato wedge between people will only bring them closer together.



  • 3 large russet potatoes, cut into wedges
  • 4 tablespoons olive oil
  • 3 teaspoons sea salt
  • 3 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • 3/4 cup Parmesan cheese
  • For the Sriracha mayo:
  • 1/4 cup mayo
  • 2 tablespoons Sriracha, or more to taste
  • For the Sriracha ketchup:
  • 1/4 cup ketchup
  • 2 tablespoons Sriracha, or more to taste

Let's get Cooking...

  1. Preheat oven to 375°F.
  2. Place potato wedges in a large bowl. Drizzle with olive oil, then sprinkle with the salt, garlic powder, Italian seasoning and Parmesan cheese. Use hands to mix well, making sure all wedges are well-coated.
  3. On a baking sheet covered with parchment paper, spread out potato wedges in a single layer. Bake for 25-35 minutes, until potatoes are golden.
  4. While potatoes are baking, combine ingredients for dipping sauces.
  5. Serve wedges hot alongside Sriracha mayo and ketchup. Enjoy!
