Pumpkin Spice Latte French Toast


Fuel your inner basic with these delicious pumpkin pancakes.



  • Filling:
  • 1/4 cup pumpkin puree
  • 1/2 cup cream cheese, room temperature
  • 1 teaspoon pumpkin pie spice
  • 3 tablespoons confectioner's sugar
  • 4 thick slices of brioche, crusts removed
  • 1 cup milk
  • 1 teaspoon pumpkin pie spice
  • 1/2 tablespoon instant coffee
  • 3 eggs
  • 1 tablespoon unsalted butter
  • Freshly whipped cream
  • Cinnamon, for dusting

Let's get Cooking...

  1. Make the filling: Beat the cream cheese with an electric mixer until smooth. Add the pumpkin puree, pumpkin pie spice and confectioner's sugar and mix until combined. Transfer the filling to a piping bag.
  2. Make the french toast: Slice a slit into the side of each piece of bread, creating a pocket. Fill the bread with the pumpkin filling, making sure not to overstuff and tear the bread.
  3. In a separate bowl, combine the milk, pumpkin pie spice, instant coffee and eggs and whisk together. Pour into a deep dish and add the bread. Soak the bread of each side for 5 minutes.
  4. Melt the butter in a frying pan over medium heat. Fry the bread on each side for 3-4 minutes. Turn off the heat, cover the pan with a lid and steam the French toast in the residual heat for 5 minutes.
  5. To serve, top with some freshly whipped cream and sprinkle some cinnamon on top. Enjoy with a pumpkin spice latte!
