Purple Yam Mochi Pancakes

Ingredients

  • Batter:
  • 200 grams pancake mix
  • 250 milliliters milk
  • 2 blocks mochi
  • 1 egg
  • 2 tablespoons purple yam powder
  • Sauce:
  • 200 milliliters milk
  • 4 tablespoons condensed milk
  • 2 tablespoons butter
  • 1 tablespoon purple yam powder
  • 1 tablespoon flour
  • Toppings:
  • Grapes
  • Blueberries
  • Blackberries

Let's get Cooking...

  1. Cut each block of mochi into 6 cubes. In a bowl, combine mochi and 150 milliliters milk and microwave at 600 watts for 4-5 minutes. Mix with a wire whisk until smooth.
  2. Combine egg, pancake mix and purple yam powder and mix to combine. Add in 100 milliliters milk and mix until smooth.
  3. Pour a little oil into a frying pan.
  4. Cook pancakes on both sides over low heat.
  5. Transfer pancakes to plate.
  6. In a saucepan, combine butter, flour and purple yam powder and heat over low heat until melted. Add in condensed milk and milk and mix well to create the sauce.
  7. Serve pancakes with the sauce and top with fruits.
