Quinoa Beet Mung Bean Salad


Erwan tosses together a damn sexy quinoa bowl.



  • 1 piece of garlic smashed
  • 1 tablespoon Dijon mustard
  • 3 tablespoons olive oil
  • 3 tablespoons of white wine vinegar
  • 1 large red beet, boiled and peeled
  • 1/3 cup red onion, thinly sliced
  • Juice of 1 lime
  • 3/4 cups of cooked mung beans
  • Salt to season
  • 1/2 cup of cooked quinoa
  • 1 yellow mango sliced
  • 2 tablespoons of chopped coriander
  • 1/4 cup of mint
  • Garnish with sesame seeds, lime rinds, extra virgin olive oil and flake salt

Let's get Cooking...

  1. Line a bowl with the crushed garlic.
  2. Whisk the mustard, oil and vinegar together.
  3. Add in the beet, lime, mung beans, quinoa, mango and coriander, mix in everything and season with salt.
  4. Plate and garnish as needed.
