Quinoa-Coated Onion Rings

Quinoa isn't just for the health-conscious. It also makes onion rings incredible.



  • Oil for frying
  • 2 large Spanish onions, cut into 1/2-inch rounds and separated
  • 2 cups white flour
  • 2 cups puffed quinoa
  • 2 cups breadcrumbs
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons salt
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1 cup mayonnaise
  • 2 cloves garlic, minced
  • Freshly squeezed juice of 1/2 lemon
  • Salt, to taste

Let's get Cooking...

  1. In a deep pot, heat 3 inches of oil to 350 degrees.
  2. Add onion rounds and flour to a resealable plastic bag and toss.
  3. Combine puffed quinoa, breadcrumbs, thyme, and salt on a plate.
  4. Whisk together buttermilk, eggs, and cornstarch.
  5. Dip each floured onion ring in buttermilk mixture to coat, followed by quinoa mixture.
  6. Fry in small batches for 2 to 3 minutes until crisp and golden brown, and drain on paper towels.
  7. Combine mayo, garlic, lemon, and salt (to taste) for dipping sauce.
  8. Serve hot onion rings with garlic mayo for dipping.
