How to make Soy Sauce Butter Gnocchi With Shiitake Mushrooms.
2 cups mashed potatoes (about 2 large potatoes)
2 cups flour + extra for dusting

2 garlic cloves, minced
4 ounces shiitake mushrooms, sliced
2 tablespoons butter
2 tablespoons soy sauce

In a large bowl, combine mashed potatoes, flour, egg and salt. Knead until everything comes together. Transfer dough to a work surface, sprinkle with flour, and knead until you have a ball of dough.
Working in batches, cut the dough and roll it into a long snake, about 3/4-inch thick. Cut each long piece of dough into 3/4-inch-long pieces. Dust pieces with more flour so they don't stick to each other.
Bring a pot of water to a boil and add the gnocchi. Once they start floating, let them boil for another 3 minutes. Drain and set aside.
In a medium skillet, heat oil over medium heat. Add garlic and sauté until fragrant. Add the shiitake mushrooms and cook until done. Add the cooked gnocchi, butter, and soy sauce. Stir until everything is evenly coated.
