Zucchini Boats With Chicken


You'll be on board with these cheesy zucchini boats after just a taste.



  • 2 zucchini
  • 50 grams shredded cheese
  • Italian parsley, chopped
  • A:
  • 200 grams ground chicken
  • 1 teaspoon cumin
  • 2 teaspoons salt
  • Pepper
  • B:
  • 1 teaspoon vegetable oil
  • 2 teaspoons curry powder
  • 2 teaspoons grain mustard
  • 1 tablespoon sugar
  • 2 tablespoons vinegar
  • 1/2 teaspoon potato starch
  • Salt
  • Pepper

Let's get Cooking...

  1. Cut zucchini in half lengthwise and scoop out the insides with a spoon.
  2. Chop up the flesh into fine pieces.
  3. In a bowl, combine the ingredients from (A) and chopped up zucchini and mix well.
  4. Line a baking pan with parchment paper and place zucchini on top. Fill the zucchini boats with the mixture and top with shredded cheese. Bake for 35 minutes at 180 degrees C.
  5. To make the sauce, combine together the ingredients for (B) and microwave until heated through.
  6. Sprinkle chopped Italian parsley on top of the baked zucchini boats and serve with sauce on the side.
