Roll out puff pastry to make an 11x14-inch rectangle. Cut lengthwise into 3 equal sections. On one section, spread ricotta, feta, spinach and green onion. Roll into a log and wrap in plastic wrap.
Move on to the next flavor. Mix whipped cream cheese, powdered sugar and vanilla. Spread evenly over puff pastry. Spread jam over cheese, roll into a log and wrap in plastic wrap.
Place ham in an even layer over last puff pastry section and top with cheese. Roll into a log and wrap in plastic wrap. Freeze all three logs for 45 minutes.
Preheat oven to 425°F. Spray a muffin tin with non-stick spray. Unwrap all three logs and slice each into 3 equal pieces. Place the rolls in a muffin tin, one per tin. Brush with butter and bake 15 minutes. Allow to cool slightly before handling.
