Summer Vegetable One-Pot Pasta


Sometimes throwing everything in a pot and seeing what happens is a valid culinary idea.



  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 3 cups water
  • 12 ounces rotini
  • 1 yellow squash, halved and sliced
  • 1 pint multi-colored cherry tomatoes
  • 1 cup green beans
  • Salt and pepper, to taste
  • 2 cups marinara sauce
  • Fresh grated Parmesan, to garnish
  • Fresh basil, to garnish

Let's get Cooking...

  1. Heat olive oil in a large skillet and add onion and garlic. Cook until softened.
  2. Add all ingredients up to marinara sauce; season with salt and pepper.
  3. Cover and cook for 15 minutes. Remove cover and cook for an additional 5 minutes.
  4. Stir in marinara sauce, garnish with Parmesan cheese and torn basil.
