The taste of sushi, with the convenience of a burrito. It's a win all around.

Servings: 2

  • 2 Nori
  • 1 1/2 prepared sushi rice
  • 1 Tuna steak
  • 1 teaspoon wasabi paste
  • 1 ripe avocado
  • 1 tablespoon good quality mayonnaise
  • 1/2 a small cucumber
  • 1 tablespoon mirin
  • 1 tablespoon soy sauce
  • Optional - pickled ginger

Let's get Cooking...

  1. Cook rice according to the packet and leave to cool. Meanwhile slice your tuna steaks into 1/4 inch slices and julienne the cucumber so it fits evenly in the rolls.
  2. In a small bowl add the wasabi, mayo and avocado. Mash together until it form a smooth paste. If needed loosen with a little soy sauce.
  3. Place the nori sheet onto a sushi roll, though you don't have to use one, so as to roll away from you, and layer over half the rice evenly.
  4. Spread half the avocado mix over the rice.
  5. Layer over the tuna, followed by the cucumber and pickled ginger if using.
  6. Starting with the side closest to you, roll tightly closed. You can tuck in the edges if you wish for a neater finish.
