Sweet Potato Breakfast Hash

You're just 3 ingredients away from easy, yet delicious, breakfast hash heaven.



  • 1 tablespoon butter
  • 1 large sweet potato, peeled and grated through food processor attachment
  • 3 eggs
  • 1/4 cup Parmesan cheese

Let's get Cooking...

  1. Add butter to a cast-iron pan on medium-high heat. Once melted and bubbling, add the sweet potato and stir so that it's all coated. Cook for 7-9 minutes or until golden.
  2. Spread the sweet potato around the pan to an even thickness. Create three wells and crack an egg into each. Cook for 2-3 minutes until the eggs start to turn slightly white. Sprinkle the cheese over the top, then transfer pan to the broiler.
  3. Cook until eggs are done (about 1 minute). Sprinkle with salt and pepper, then slide the hash out of the pan to devour.
